Spaghetti with Squash Sauce Review
It’s amazing how deliciously creamy a sauce can taste without containing any cream or fat. The puréed seasoned butternut squash and onions made a sauce so rich that it was hard to believe it didn’t have cashews in it like most of the velvety vegan alfredo sauces do.
It was a simple veggie-based sauce that is a nice change of pace from the usual tomato sauce in your typical spaghetti dinner. However, I have noticed that the Forks over Knives cookbook tends to instruct people to sprinkle chopped parsley over it seems like every dish but, again, it didn’t really add much. I actually preferred it without the parsley.
My three and four year olds woke up from their naps cranky and refused to try it although I’m sure they would have liked it on another day since it reminded me of macaroni and cheese. My one year old loved it though!
