Spicy Cilantro Pesto Review

As a fresh and exciting take on the traditional basil pesto, this spicy cilantro pesto was a huge hit. The flavors were perfect with the refreshing cilantro complementing the slight spiciness of the jalapeno and the the creamy silken tofu pulling it all together with the hint of cheesiness from the nutritional yeast.

I left out the optional sunflower seeds and found that they were not needed since it turned out great. I would make it exactly the same next time.

I first tried the spicy cilantro pesto as a pasta sauce and it was amazing. The flavor is concentrated but it is not too spicy so you can eat a lot of it at once without overpowering your palette. It makes a large batch so I was also able to enjoy this sauce/spread on a sandwich, as a salad dressing, dolloped on to of Pinto Bean Stew with Hominy and Spicy Cilantro Pesto (click to see my review of that recipe), and as a chip dip.

I even made a delicious and simple burrito by spreading some of the spicy cilantro pesto on a tortilla and rolling it up with some warmed pinto beans. I would imagine that it would also work well as a layer in a seven-layer bean dip, or as a topping in almost any southwestern savory recipe.
