Winter Vegetable Risotto Review
This Winter Vegetable Risotto was probably the best vegan recipe I have ever made. Well . . my awesome husband made it for me but I was the taste tester and review writer 🙂
The creamy-savory-buttery-cheesy sauce is unlike any other plant based sauce I have ever had. It seems that it had to be unhealthy or that it must contain cream or butter but it didn’t.
We ran our of white rice so I subbed half the arborio rice for wild rice. Although wild rice has a slightly different flavor and texture, it still complimented the recipe well but made it feel more whole-grainy. The original version with arborio rice I imagine would be closer to the comfort food risotto many of us remember eating growing up.
Roasting the squash, parsnips and carrots elevated this dish to the next level. This allowed them to have a soft and creamy texture and caramelized the edges of the vegetables to a light brown color.
Overall, if you are craving creamy comfort food, this butternut squash risotto is your ultimate solution because of the perfect combination of a velvety sauce, tender rice, and delectable roasted vegetables.
